Craig's Meatloaf Monstrosity

Say you’re really hungry, and you’re on a low-carb or Paleolithic diet.  You start thinking about Mom’s old stand-by, the humble meatloaf. Now, the typical meatloaf recipe uses breadcrumbs, rice, or oatmeal, but those aren’t allowed on the aforementioned diets. This is the solution.

Ingredients:

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 pound ground lamb
  • 1 pound ground turkey
  • 1 pound ground veal
  • ½ head shredded cauliflower
  • 2 shredded carrots
  • Small bunch chopped parsley
  • 4 cloves minced garlic
  • 1 chopped onion
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp cumin
  • ½ tsp paprika
  • 1 tsp dry mustard
  • 2 whole eggs
  • ⅓ cup liquid egg whites

Directions:

  1. Preheat oven to 425°F.
  2. Put all ingredients in a large bowl and mix by hand until thoroughly blended.
  3. Pour the mix into a 9×13″ pan and form into a loaf around 2″ high.
  4. Bake for 45 minutes, then drop the heat to 400°F and bake for an additional 15–25 minutes until internal temperature reaches 140°F.
  5. Remove from oven and let rest for 15 minutes.
  6. Slice and serve.

Substitutions:

  • Really, any combination of meat(s) adding up to 5 pounds is sufficient, especially if you can’t eat pork or beef for religious reasons.
  • If you don’t want to use liquid egg whites, just substitute 1–2 more whole eggs.
  • The spice combination is completely subject to taste.  Experiment with flavors you like.
