Say you’re really hungry, and you’re on a low-carb or Paleolithic diet. You start thinking about Mom’s old stand-by, the humble meatloaf. Now, the typical meatloaf recipe uses breadcrumbs, rice, or oatmeal, but those aren’t allowed on the aforementioned diets. This is the solution.
Ingredients:
- 1 pound ground beef
- 1 pound ground pork
- 1 pound ground lamb
- 1 pound ground turkey
- 1 pound ground veal
- ½ head shredded cauliflower
- 2 shredded carrots
- Small bunch chopped parsley
- 4 cloves minced garlic
- 1 chopped onion
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper
- ½ tsp cumin
- ½ tsp paprika
- 1 tsp dry mustard
- 2 whole eggs
- ⅓ cup liquid egg whites
Directions:
- Preheat oven to 425°F.
- Put all ingredients in a large bowl and mix by hand until thoroughly blended.
- Pour the mix into a 9×13″ pan and form into a loaf around 2″ high.
- Bake for 45 minutes, then drop the heat to 400°F and bake for an additional 15–25 minutes until internal temperature reaches 140°F.
- Remove from oven and let rest for 15 minutes.
- Slice and serve.
Substitutions:
- Really, any combination of meat(s) adding up to 5 pounds is sufficient, especially if you can’t eat pork or beef for religious reasons.
- If you don’t want to use liquid egg whites, just substitute 1–2 more whole eggs.
- The spice combination is completely subject to taste. Experiment with flavors you like.
